Beef Barbecue with Sauce

- 4 lbs beef roast or brisket
- 1 cup chopped celery
- 6 chopped carrots
- 2 chopped onions
- salt and pepper
Roast meat with vegetables, salt and pepper at 325° for 4 to 6 hours.
When done cut up meat, mix sauce, and pour over meat and vegetables. Bake 1 more hour at 325°.
May be prepared ahead and frozen.
Sauce:
Pour off drippings to determine amount of sauce. Begin with:
- 1-1/4 cup drippings
- 1-1/2 cup catsup
- 6 Tbs vinegar
- 6 Tbs Worcestershire sauce
- 4 Tbs brown sugar
- 1 tsp prepared mustard
