Carrot Cookies

- 3/4 cup sugar
- 3/4 cup shortening
- 1 cup mashed cooked carrots (about 8) (or use canned carrots) and blend
- 1 egg
- 2 tsp baking powder
- 2 cups flour
- 1/4 tsp salt
- 1-1/2 tsp vanilla
- 1/2 cup raisins or nuts or both
Cream sugar, shortening, add egg and carrots. Sift dry ingredients and add to mixture. Add vanilla and nuts. Drop on cookie sheet. Bake at 375° for 15 min.
Frost while still warm with orange frosting. Mix juice of 1/2 orange and rind of one orange and add powdered sugar.
