Egg Plant Parmesan

- 1 large eggplant peeled, and cut into 1/4" slices
- 1 egg
- 1 cup bread crumbs (flavored with oregano, garlic, basil, salt and pepper)
Dip eggplant in whipped egg and then bread crumbs. Broil at 500° until soft. Place in greased 9"x13" baking dish. Layered with sauce and grated mozzarella cheese.
Sauce:
- 2 8 oz cans tomato sauce
- 3 Tbs grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp pepper
- dash garlic powder
Top with sauce and cheese. Bake at 350° for 20 minutes or until bubbly.
