Microwave Peanut Brittle
- 1 cup sugar
- 1/2 cup corn syrup
- 1 cup Spanish peanuts
- 1 Tbsp butter
- 1 tsp vanilla
- 1 tsp baking soda
All microwaves cook differently. Times may differ.
Put sugar and corn syrup in a microwave-safe bowl. Microwave for 3 minutes at 100% power.
Add peanuts. Microwave for 4 minutes at 100% power.
Add butter and vanilla. Microwave for 2 minutes 30 seconds at 100% power.
Add baking soda. Mix and pour out on a greased cookie sheet. Spread quickly before it starts to harden.
