Tabbouleh (Cracked Wheat Salad)

- 2-1/2 cups boiling water
- 3/4 cup cracked wheat
Add wheat to boiling water and cook for 20 min. Allow to cool.
- 1 cup chopped parsley or 1-2 Tbs dry parsley flakes
- 1 cup chopped green onion or 1/2 cup yellow or white onion
- 1/2 cup chopped green pepper
- 3 tomatoes chopped fine
- 2 cucumbers chopped
Dressing:
- 1 tsp salt, to taste
- 1/2 tsp black pepper
- 1/2 cup oil (may be reduced)
- 1/2 cup lemon juice
